Cut Okra and Tomatoes Au Vin
| 2 tbsp. Olive oil |
6 slices thick bacon, cubed |
| 2 medium onions, chopped fine |
1 clove garlic, minced |
| 2 lb. Fresh-cut okra |
4 medium tomatoes, cut into 6 or 8 pieces each |
| 1 cup Sauterne wine or dry white wine |
1 or 2 tsp. Justin Wilson pepper sauce |
| 1 tbsp. Worcestershire sauce |
Salt |
| Put olive oil in a skillet large enough so that mixture can be stirred. Add cubed bacon, onions, and minced garlic. Sauté this for about 10 minutes. Add okra and tomatoes. Pour wine over this, and add pepper sauce and Worcestershire sauce. Salt to taste. Cook until okra is tender and has lost its green taste. |
