Stuffed Potatoes Au Wayne




6 large potatoes

Chopped green onions

½ lb. butter or oleo

6 tbs. sour cream

2 tsp. black peppers

Cooked shrimp, crab, or crawfish, 2 tbs. per potato, chipped fine

¼ to ½ tsp. ground cayenne pepper

2 tsp. garlic powder

   

Rub each potato with cooking oil. Bake potatoes 1 hour. Cut the top off lengthwise and scoop out and reserve the middle. Save the potato shells for stuffing.

Mix the rest of the ingredients together with the reserved cooked potato filling. Fill potato shells with stuffing. Sprinkle with cayenne pepper, if desired. Wrap in foil or Plastic Wrap, then heat in microwave, oven or grill until hot.
