2 cups cooked brown rice |
1 large tomato, peeled, seeded, and chopped |
|
½ cup finely chopped fresh parsley |
1 cup finely chopped onion |
|
1 tablespoon finely chopped fresh mint |
½ teaspoon minced garlic |
|
½ cup olive oil |
½ cup fresh lemon juice |
|
Salt to taste |
Justin Wilson Pepper sauce or ground cayenne pepper
to taste |

Combine the rice, tomato, parsley, onion and mint
in a large bowl and toss lightly. In a small bowl, whish together the
garlic, olive oil, lemon juice, salt, and pepper sauce, then pour over
the rice mixture and toss. Serve on a leaf of lettuce with a chunk of
feta cheese and marinated olives. |
