Corn Flour Pancakes
| 2 cups corn flour | 2 large eggs, well beaten |
| 1/2 tsp ground cinnamon | 2 cups buttermilk |
| 1/2 tsp salt | olive oil |
| 2 tsp baking soda |

Mix the dry ingredients together real well in a large mixing bowl. Beat the eggs, then add the buttermilk to them. Mix well and add to the dry mixture. Coat the bottom of a large frying pan with olive oil and heat up over a medium fire. Add the batter by the spoonful to the skillet and cook on both sides until golden brown. Serve with cane syrup or maple syrup. |
