Preheat the oven to 350F. Mix the sweet
potatoes, honey, cinnamon, and salt together in a large mixing bowl.
In a separate bowl, beat the eggs, then gradually beat in the sugar
and vanilla. Pour the eggs into the potato mixture and mix well. Add
the pecans, if desired, and pour into the pie shell. Bake for 1 hour
or until a knife inserted in the middle comes out clean. Yield: One
9-inch deep-dish pie.
