Brown Rice Salad

4 servings

 

 

2 cups cooked brown rice

1 large tomato, peeled, seeded, and chopped

½ cup finely chopped fresh parsley

1 cup finely chopped onion

1 tablespoon finely chopped fresh mint

½ teaspoon minced garlic

½ cup olive oil

½ cup fresh lemon juice

Salt to taste

Justin Wilson Pepper sauce or ground cayenne pepper to taste

 

 

Combine the rice, tomato, parsley, onion and mint in a large bowl and toss lightly. In a small bowl, whish together the garlic, olive oil, lemon juice, salt, and pepper sauce, then pour over the rice mixture and toss. Serve on a leaf of lettuce with a chunk of feta cheese and marinated olives.

 

Peel and mash Potatoes. Add bacon dripping and everything else. Very Simple to make.
